Easy Vegan Peanut Butter Cookies


     Its hard not to love peanut butter cookies. They're gooey and crunchy, sweet and salty....a perfect balance! Peanut Butter cookies have always been a favorite in our house and we've tried several recipes, but by far this one is my favorite!

Vegan Apple Pie

     Christmas is just a few days away and that probably means alot of baking, cooking or traveling for most of you! I love cooking and baking for the holidays and sharing what I make with my friends and family! Pies are just one of the many desserts we have around the holidays and Applie pie has to be one of my favorites!


     This Apple Pie is super easy to make, just has a few ingredients, and is really delicious! I love how the kitchen smells when this pie is in the oven!

Ingredients:

Crust

2 cups Flour ( I like to use half whole wheat and half all purpose)

1/2 cup chilled Coconut Oil

4 TBS Sugar or Maple Syrup

1 tsp Salt

1/2 cup ice cold Water ( or enough to bind the dough together )

Pie Filling

7-8 large Apples

1 cup Sugar

1/2 cup Flour

4 tbs Corn Starch

2 tsp Cinnamon

1/2 tsp Nutmeg

1 tsp Vanilla

1 tsp Salt

4 tbs Lemon Juice

1/2 cup Water or Apple Juice


     Start by washing, peeling and slicing your apples and soaking them in the lemon juice for around 30 minutes. While they are soaking, make your pie crust.

      Mix together the dry ingredients- flour, salt, and sugar. Then, add in the chilled coconut oil and use a fork or your fingers to rub it into the flour mix. Once you have crumbly mixture, start add the cold water bit by bit until you have a smooth dough. Wrap it in plastic wrap and place it in the fridge to chill for at least 30 minutes.



     Okay, back to the apple pie filling! Add in the water to the apples and lemon juice. Then add in all the dry ingredients- flour, starch, spices, sugar and salt. Mix to coat and then set aside.



      Flour a surface and place half of the chilled dough on it. Roll it out big enough to fit in your pie pan with some 'extra' around the edges.


Pour in the pie mix and as much of the liquid as you can. Set aside.

     Roll out the remaining crust dough and slice it into strips. Alternate laying the strips across the pie to make a woven pattern. Or you can use cookies cutters to make fun shapes for the tops! Brush some water over the crust and spinkle on some extra sugar.

     Line a baking sheet (one with a lip around the edges) with tin foil and place the pie on the sheet. Heat the oven to 375. Bake the pie for 50-60 minutes, or until the crust is browned and the filling has cooked through. Allow to cool for a few minutes before slicing and serving.


     I love to eat this pie with coconut or almond vanilla ice cream or some coconut whipped cream! Its best served warm right out of the oven, or warmed up for breakfast the next day! How ever you choose to eat this pie, I just know you are going to love it!



    You can use this pie crust for just about any pie or even homemade pop-tart crusts! I love how simple it is to make! It would also be a great idea to make several batches and freeze them for later use!

Fresh Mexican Quinoa Salad


  My family and I love Mexican food! We probably could live off of it, and we do eat it a lot! It can be pretty healthy too, with the fresh or grilled veggies, salsas, and so on. We like to use a lean ground beef or sliced and grilled chicken for our meat, but we have grilled fajita steaks and fish too! There are so many different types of Mexican food that are really good, like south-west, Tex-Mex, Baja and traditional! This fresh, crunchy, and healthy Mexican salad fits into just about all Mexican food types, and is the perfect summer dish to add to your table!


Ingredients:
2 cups Quinoa, cooked and chilled
2 Bell Peppers
1 15 oz. can Black Beans
1 15 oz. can Corn
1/2 large White Onion
3 Tomatoes
1 1/2 Limes
Salt and Pepper
1 tsp Paprika
1/2 tsp Cumin
Pinch of Cayenne (or more if you like to live dangerously) :)

Start by dicing up your peppers and onions. Since we aren't cooking these veggies, you want them to be chopped really finely. At the Farmer's Market this week we found purple bell peppers, and they were amazing!





Add them to a bowl and mix to combine.



Pour your canned beans on a sieve and rinse well with cold water.

Add the beans and corn to the mix and stir.


Chop your tomatoes and add them to the bowl and combine. Honestly, this mix alone is delicious!
Add in your chilled quinoa and mix.

Now we need to make the dressing. Squeeze the juice from your limes into a bowl and add in your spices. Go by taste, you might need to add more depending on your preference!

 
 
Mix it well and then pour over the salad. Make sure to mix the dressing in well, so you don't get some salad with flavor and some without!


This salad is best after its set in the fridge for a bit, but if you don't have the time, its great right away as well!

 
This salad is delicious! Super fresh, has amazing texture, bright flavors and super healthy as well!
I suggest serving this with tacos, fajitas, taco salad, taco soup, any other Mexican foods you can think of, or even eat it for a light meal on its own!

Smoothie Bowls

I love smoothie bowls! They are the perfect summer breakfast to keep you healthy, energized, and cool! They are also a great, quick breakfast for back to school!


You really can make a smoothie bowl with anything you want, but here are a few great recipes! 

#1 Strawberry Delight
1 cup Frozen Strawberries
1frozen Banana
1 tbs chia seeds
protein powder of choice

Thaw frozen berries and place in blender. Slice frozen banana and add to blender along with chia seeds and protein powder. Shake well and blend. You might need a bit of liquid, but the more you add the thinner the smoothie will be. Add to a bowl and top with whatever you like! More fruit, granola, nuts, the list is endless!


#2 Tropical Green Machine 
1/2 cup frozen Mango 
1/2 cup frozen Pineapple
1/2 cup frozen Spinach
Protein powder of choice

Thaw fruit and add to blender with spinach and protein powder. Blend well. Top with fresh fruit, granola, chia seeds and more! 


#3 Chocolate Cherry Bomb
1 cup frozen cherries
1 frozen Banana 
Chocolate Protein Powder 
(Optional) 1 tbs cocoa powder

Slice banana and add to blender with thawed cherries, protein powder, and cocoa. Blend well. Top with cherries, sliced banana, and chia seeds! 

Those are some of my favorite smoothie bows, but you can do some many other combos as well! Berry and Banana, Mango and Yogurt, Chocolate and Raspberry......

Stuffed Pepper Soup

 I love stuffed bell peppers! They are so fun and delicious! But, I also love stuffed bell pepper soup!! It is so delicious, flavorful and healthy too!

I have made this soup recipe many times before, and it is always a crowd pleaser! I am always told that this soup is delicious, and asked for the recipe! This soup is full of veggies, flavor and yumminess! Its the perfect healthy meal for all year long!

So, let me show you how to make this amazing soup!

Ingredients:
1 yellow onion, diced
3 bell peppers, chopped
1 tbs coconut oil( or olive oil)
2 tbs minced Garlic
1 10 oz can of Rotel
1 can of canned Corn
1 can diced tomatoes
3 tbs ketchup( the kind without High Fructose Corn Syrup)
1/2 lb lean ground beef, cooked
Salt and Pepper to taste
1/4-1/2 tsp Cayenne Pepper (Less is more)
1-2 tsp Paprika
3-4 tbs Taco Seasoning ( I use a mix from Frontier Trading Post, but use your favorite blend!)
1 tbs chopped fresh Basil
2 1/2 cup Broth (Any kind it fine, I used Chicken but Veg. or Beef broth would work too!)

Start by warming the oil in a pot. Add the onions when the oil is warm.

Cook until they become soft and start to color around the edges! Then, add in the garlic and cook for around a minute.

Next, Add in the bell peppers and cook until they become soft.


When the Peppers are soft, add in the canned corn and Rotel.



Bring this to a bubble and then add in the canned diced tomatoes and Ketchup.

 
Now we add in the cooked ground beef. I just cooked mine with a bit of my Taco Seasoning before adding it to the soup.


Let that warm up a bit. Next, we can add in the seasonings.

 
Let this come to a low boil and then add in the broth and basil.

 
Bring this to a boil and then reduce the heat and let it simmer for around 45 minutes. This lets all the flavors combine and come together!
 
 
Make sure you taste it to make sure you have the right amount of seasoning! It smells so good and looks so colorful!
 
 
My family and I like it best served over rice or quinoa with a sprinkle of cheese on top!
