Easy Vegan Peanut Butter Cookies


     Its hard not to love peanut butter cookies. They're gooey and crunchy, sweet and salty....a perfect balance! Peanut Butter cookies have always been a favorite in our house and we've tried several recipes, but by far this one is my favorite!




     I love everything about this recipe. Its easy, with just a few ingredients and even fewer steps, its flavors are on point and the dough tastes just as good as the baked cookie! My 4 year old brother was my baking partner when I made these and he wanted to know if we had to bake the dough or if we could just eat it raw! The good thing is, since its vegan, you can eat the whole bowl of dough and have nothing to worry about!


     These cookies are perfect as is, or spiced up a bit! Add some cinnamon for a warm flavor, or drizzle with melted chocolate after they have cooled! They also make delicious ice cream sandwiches! However you choose to enjoy these amazing cookies, I know they will become a favorite!


Ingredients:

1 1/4 cup Peanut Butter
 
1 cup Brown Sugar

1/4 cup Nondairy Milk

3 TBS Oil (*Optional)

1 1/3 cup Flour

1 tsp Baking Soda

1/2 tsp Salt

1 tsp Vanilla


     Add your peanut butter to your bowl and warm it in the microwave for 30 seconds to make it softer and easier to work with. Then mix in you nondairy milk (I used almond milk) , brown sugar, oil ( if using) and vanilla.


   Next, add in the flour, baking soda, and salt and mix until fully combined. At this point you could stir in some chocolate chips, chopped nuts or dried fruit for some added flavor! This batch I choose to keep plain and simple!


     Preheat oven to 350 F and grease or line a baking sheet. Roll the dough into 2 inch balls ( or however big or small you want your cookies to be) and place them on your baking sheet. Use a fork to press down in the center to make the traditional pattern.


     Then bake for 10-12 minutes, or until the edges start to brown. Allow them to cool for 5 minutes on the baking sheet before removing and allowing to cool completely.

     
     These cookies didn't last long at our house! We ate them with chocolate ice cream, dipped in milk ( coconut or almond milk is best!) and just by themselves as a snack or dessert!
     They make great school or office treats and are perfect for potlucks or parties! Its hard to go wrong with such a simple, yet delicious cookie!



     I really hope you try this recipe out and see for yourself how delicious they are! This is a recipe you'll want to hang on to for those days when you want a sweet treat, but not a complicated recipe!
