Summer 2015 Play-List

I've said before, and I'll say it again: Music is a great way to make a workout go by faster and give you energy to push harder. It also can help you relax, study and just make you happy! I've done a playlist before ,like my, Spring PlayList and Winter PlayList and to add to that list, I am going to share with you my Summer Playlist!


So, here we go! Here is my Summer Playlist , I hope you enjoy!


Stars - Grace Potter and the Nocturnals  My Brother introduced me to this song, and I've been loving it ever since!

Rhythm of Love - Plain White T's   This song has such a great rhythm and tone to it, perfect for relaxing by the pool!

See You Again - Wiz Khalifa  This song is a great workout song, since it has a great beat to it!

No Freedom - Dido I recently heard this song on the radio and fell in love! Perfect for relaxing or a car ride!

Thank You   - MKTO Another great workout song! I love MKTO'S music, but this one is a favorite!

Free to Be Me    - Francesca Battistelli  Besides being a great relaxing song, this one has a great
message too!

Uncover - Zara Larson This song is one of my favorite workout songs because of the beat and tempo!

Can't Stop Dancing - Becky G This song has perfect beat and tempo for running!

There was a Time - Mandolin Orange   This song is a great car trip song! I love Mandolin Orange, and you should check out their other music!

Adore - Jasmine Thompson  Jasmine Thompson does a lot of covers on YOUTUBE, but her original songs are amazing too! This song is perfect for chilling or..writing blog post! Check her out on Youtube for great music!


I hope you give these songs a listen and that you like them as much as I do! Music is a big motivator for me and I love to listen to music while I workout, in the car, while I'm writing blog posts and while I'm laying out by the pool!

4 Healthy Summer Drinks

Summer is here! Its getting hotter and hotter everyday, and I am always on the lookout for a fun and healthy way to cool off. Refreshing, ice cold, drinks are a great way to cool off on these hot summer days!

Ice Coffee
I love piping hot coffee to wake me up in the mornings, but during the day I like to have nice cold coffee. Its so simple to make yet so refreshing!

Cold Coffee( I make extra in the morning, so that by the afternoon its cooled and ready to go!)
Ice
Sweetener(Optional) ( Try Truvia, Honey or your sweetener of choice)
Milk(Optional) (Try Almond Milk, Coconut Milk, Cashew Milk, Dairy Milk.....)
Flavoring(Optional) (Try Vanilla, Almond Extract, Chi Spices...the list is endless!)

Mix together the coffee, sweetener, milk and flavoring and pour over ice! My favorite combo is coffee(I don't take milk or sweetener in my coffee) and vanilla!

Peach Tea

Tea is a favorite drink in my house. We like black tea, green tea, herbal teas.... and fruit teas! This week I made Peach Tea and it was delicious! Its perfect for a cool, refreshing summer time drink!

Tea Bags (I used Black Tea)
Peaches

Heat up some water and pour into a pitcher. Add tea bags. Slice the peaches really thin, and add to the pitcher as well. I used 1 peach for 12 cups of tea, but play with the ratio and find how you like it! Let this steep until it has cooled(Don't put it in the fridge to cool. This will cause the tea to be cloudy). Pour over ice and enjoy!
 
 
Ginger Lemonade
 
Lemonade is so refreshing and delicious, but sipping on this sugary drink all day can really add up. My sister and I have been making a healthier version of lemonade, and it is just as good(or better!) Its such a simple recipe and you can add things to it to create different flavor combos! My sister likes to add grated ginger to ours, and it is yummy!
 
8 Cups Water
2 Cups Lemon Juice
1/2 Cup Honey
2-3 TBS Fresh grated Ginger
 
Start by heating up a cup or so of the water. Pour this into the pitcher along with the honey. Stir this until the honey is mixed in well. Then add the lemon juice and grated ginger. Stir to combine and then add the rest of the water. Pour over ice and enjoy!
What I love about this drink is that its guilt-free, healthy, nutritious and delicious all at the same time! The ginger adds such a nice flavor to this drink, but if you don't like ginger there are so many other flavors you can use. Grate in the zest from a lime or orange to make a nice citrus drink, or add the juice from any berry or fruit of your juice to make a fruity lemonade!
 
Spa Water or Essence Water
This drink is really popular right now, and rightly so! It is so easy and so refreshing! You can make it with anything you want and really customize it to your liking!

Fruit/Veggies
Herbs
Ice
 
Slice up your favorite fruits and veggies( I love to do Lemon and/or Limes and Cucumber). Then tear up some herbs. Don't chop them too small, or they'll catch in a straw. I love to use mint or lemon balm! Add the fruit and veggies and herbs to a glass with ice and fill with water. The longer it sits, the more flavor the drink will have! Have fun with the combos and enjoy!
 
 
Along with these 4 Summer Drink Ideas, Water is something you should be drinking a lot of! Make sure to drink at least 8 glasses of water ,in addition to other types of drinks, a day!

Whole Wheat Naan Bread

Naan bread is so delicious! I first had it store-bought and I liked it then, but home made is even better! If you've never had Naan before, you should try it! Believe me, you won't be disappointed!


Most recipes for Naan that I've found use all white flour, sugar, dairy milk, and use little or no seasoning. In my recipe I use whole wheat flour, honey, almond milk( though there isn't anything wrong with using dairy milk, I just like the flavor almond milk gives to the bread) and spices for a hearty and more flavorful bread!

Ingredients:
4 cups Whole Wheat Flour( or 2 cups Whole Wheat and 2 cups All Purpose)
1 tsp Salt
1 1/2 tsp Baking Powder
1 tsp Baking Soda
1/4 tsp Ground Corriander
1/4 tsp Curry Powder
1/4 tsp Garam Masala
1/4 cup Warm Water
1 tbs Honey
1 tbs Dry Active Yeast
3/4 cup Almond Milk
1 cup Greek Yogurt

Start by warming your water. It should be lukewarm temp. Whisk in honey and yeast.

Let that sit while we move on to the next step. Mix dry ingredients( Flour, salt, baking powder, baking soda, ground coriander, curry powder, and garam masala) together.
 
Back to the yeast, it should have started to rise and bubble. You should also smell a familiar just-baked-bread smell.
 
To this, add the almond milk( Note: use any milk you desire. Dairy, Goat, Cashew, Coconut..... any will work!) and yogurt. Whisk to combined.  Add this to the dry mix and combine. Knead just until the dough has come together. It will be a sticky dough.

Take the dough and place it in a bowl. Cover with a towel and let sit in a warm place for at least an hour.

The dough should double in size. Once it has done so, we are ready to get cooking!

There should be lovely yeast bubbles all over!

Heat some butter, coconut oil, or olive oil in a skillet over medium heat. On a floured surface, roll out little balls of the dough. They should be fairly small.

Roll the balls out very thin. They will puff up in the skillet, so don't worry!


Place one unbaked Naan bread in the skillet and cover for 1-2 minutes.
It should have lovely bubbles and starting to go brown on the edges. Flip and cook for another minute. Remove from heat and then repeat with the rest of your dough.

They smell so amazing and they taste wonderful too! I always end up eating the first Naan bread I make, just to make sure it taste good!

We like to have Naan with Tiki Masala and Curry dishes. They are also great for snacks or even used instead of sandwich bread! You can switch up the seasonings and even use these for gyros!

Post Workout Snacks

Eating a healthy and nutritious snack after your workout is a great way to reenergize your body and help it grow and become healthier! It is important that your after-workout snack is healthy, nutritious and full of the things your body needs after your workout!

Water is an important pre, during, and post workout drink. Make sure to drink lots of water!


Peanut Butter(Or any Nut Butter) on Apples. I love this snack, and its a great post workout snack because it replenishes your body with protein, natural sugars and fiber!

Banana Ice Cream. This healthy snack is pretty popular right now, so you won't have a hard time finding a recipe. This is a great snack because bananas have potassium which helps your muscles keep from being sore.

Protein Shake. Having a protein shake or smoothie is a great way to cool down after a workout and get some protein and fiber back into your body!

Trail Mix. Most trial mixes are a great post workout snack. The ones with candy in them, well...not so much, but the others are great! They have nuts, dried fruits and often seeds which gives your body a lot of important nutrients! You can even make your own Trail Mixes to met your preferences!

Oatmeal. Oatmeal is a great source of fiber and protein. Top it with nuts, dried and/or fresh fruit for a great post workout snack or breakfast!

Ham and Cheese on Crackers. This snack is great for a post workout snack because it contains protein, fiber, sugars and fats! Just make sure you are using good quality and healthy meat, cheeses and crackers!

Eating a healthy snack after your workout is a great way to maintain a healthy body!  I hope these snack ideas have given you inspiration for choosing the right post workout snacks!

Father's Day + First Day of Summer

Father's Day falls on the first day of summer this year! I find this very cool, two wonderful and fun things on one day!

Father's Day
Father's Day is the time to celebrate our Fathers, Grandfathers, Great Grandfathers and so on. There are so many ways to do this! Giving a gift to your Father, to celebrate him and thank him for being such a great father, doesn't always have to come wrapped and tied with a bow. There are so many ways to celebrate and thank your father and I want to share a few ways to do that!

Make a Meal
Who doesn't enjoy a good, home cooked meal? Taking time to make a nice meal, and eat it, together with your father is very special. Try something you know he'll love, or let him pick out a recipe!

Table for 2
If you aren't into cooking, going out for a nice meal can be just as special. This gives you time to talk and enjoy time with Dad. Pick a place you love, or try something new!

Experience
Go out and do something new, or something you enjoy with your Dad. Go to the park, Zoo, museum, take a class together or something else you'll both enjoy. If you don't live close, sending a gift card for a particular activity is great too!

Pick Up the Phone
Sometimes life gets in the way and we all become a little too busy. Picking up the phone and calling your Father can be just what he wants. Talking to someone you love can lift the spirit and make your day!

Homemade Gifts
Homemade gifts are always better( in my opinion) because they come from the heart. You take special time to make them, so they are worth so much more! Pick something your Father loves and create a gift based on that. If he likes grilling or cooking, make him an apron or put together a grilling set. Maybe he likes to garden, make him a garden set or maybe paint a pot for him to plant in. Making a card is fun too! I love to make personal cards for family members! See? There are endless ideas for a personal, made at home, gift for Father's Day!


Celebrating Father's Day is so much fun! Make sure to take time and tell your Dad just how special he is to you! I hope this post has given you a few ideas on how to celebrate you Father on this special day!

First Day of Summer

I love summer for so many reasons! No school, long warm days, swimming, tanning, sunshine, fruit, farmer's markets, grilling....... Celebrating the first day of summer is so much fun! Let me share with you a few ways to do this!

Party Time
Go big and throw a first day of summer party! Invite some friends and get the grill going, make some lemonade and ice tea and have a good time! Since this year Father's Day falls on the same day, double up and make the party and Father's Day party too!

Try a New Recipe
This is a favorite for me! Pick a summer themed recipe and try it out to celebrate the day. I made a watermelon Fresca the other day, it was amazing!

4 cups cubed watermelon
2 cups coconut water
1 cup lemon or lime juice
4 tbs honey

Blend in a blender until frothy. Drink right away for pour into an ice cream machine for a slushy!

Get Sun Tattoos
No, its not what you think! Sun tattoos are great fun, and naturally temporary! Apply sunscreen all over and then pick a spot where you want your tattoo. Get some Elmer's Glue and paint a picture, design or word on to the desired area. Lay out in the sun and let the rays do the work. You'll tan every where but where the glue is, so you are left with sun tattoo!

H2O
You don't have to have a pool for this one, though swimming is fun! Turn on the sprinklers, have a water balloon fight or get out the water guns! Have fun and get soaked!

Layered Fruit Pops!

   Summer is approaching very fast! The days are getting longer and the weather is getting warmer!  And what better way to cool off than with a delicious popsicle!?! This recipe is super easy to make, healthy, and you only need 2 ingredients!!

 
Don't they look delicious? I love the contrast of the colors!
 
Ingredients:
2 Cups Mango Chunks
1-1/2 Cup Berries
 
and that's it! Can you believe how simple this recipe is?
 
First, if you are using frozen fruit(I did) you need to let them thaw a bit.
 
 
Mangoes are my favorite fruit!
 
 
Place the mangoes in a blender or food processor. Blend until creamy and smooth!

Then, get your popsicle molds ready! I got this super cute one at TJMAXX the other day!


Fill the molds half way up.

 
Now we need to show some love to the berries!
Place the berries in the blender.
 
Blend to a puree
 
Now fill the molds to the top with the berry puree.
 
Place the lids and sticks in the molds. Put them in the freezer for at least 4 hours, but over night is better. Once frozen, take them out of the freezer.
 
Run under warm water to lose the mold from the pop.

Now they are ready to eat! Enjoy them on those hot, sunny days or anytime when you're craving a summery treat!

I love the flavor combo of the berries and mangoes! The mangoes are sweet and the berries have a hint of tartness that just make these pops, pop!

To store, place back in the molds and keep in the freezer.

These pops are healthy, beautiful, easy to make, and delicious! Perfect for a snack by the pool or to cool off after spending time outside in the sun!

Berry Lemon Muffins

I know, these aren't the greatest looking muffins ever, but they are delicious all the same! The muffins are the perfect blend of the tartness of the berries and the sourness of the lemon! They are perfectly moist and delicious!

Ingredients:
1 cup Coconut Flour
1 Tbs. Chia Seeds
1 Tsp. Baking Powder
1/2 Tsp. Lemon Zest
Pinch of Salt
3 Eggs
1/3 Cup Coconut Oil
1/3 Cup Honey
1/4 Cup Lemon Juice
1 Cup Coconut Milk
1 Cup Frozen Berries

Start by whisking together the dry ingredients. Make sure that the Baking Soda doesn't clump up.

Next, beat the eggs and add to the bowl along with the lemon juice and coconut milk. Make sure to mix well!
Heat the coconut oil and honey together in the microwave and mix into batter.
Then fold in the frozen berries. The more you mix this the more color will come out of the berries, so keep this in mind! If you want a purple-ish batter like I did, mix fairly well. If you want to keep the colors separate, just fold to combine.

Grease a muffin tin and then scoop the batter into the molds. These muffins don't rise too much, so fill them fairly full.
Bake at 350 F for 30-35 mins. They smell so good while baking!

Once they are baked, let cool for 5 minutes before removing from the pan and allowing to cool completely.

They are just simply delicious! A perfect spring and summer breakfast, snack or even dessert! I love how the berries just burst when you bite into them!

So, even if they aren't beautiful in looks, they really pack some yummy flavors!

Portion Control and Making a Balanced Plate

 It is a no-brainer than too much of unhealthy food isn't good for you, but too much of healthy food can act in the same way! Practicing portion control and learning how to balance your plate is important to achieving your goals as well as maintaining a healthy body!

Portion Control
 Let's start with portion control. This is something that should be practiced every time you go to eat anything! The only thing that portion control doesn't really apply to is water, which you can't really have too much of anyways!

I found a great picture on this website, The Skinny Confidential  , That explains portion control really well!


Your portion size for rice, pastas, fruits and veggies is the size of your fist. So, next time you are serving up some rice, pasta or fruit and veg, check your portion size by simply making a fist!

Next on the list is meat, fish and poultry. This should be measured by the size of your palm.

Nuts, raisins, and other dried fruits should be measured by handfuls. One handful equals one serving. This is a great tip, because most people( including myself!) tend to over eat on these types of foods!

Chips, popped corn, pretzels and other snacks of the like, are measured by handfuls as well. Two handfuls equals one serving!

Peanut Butter, nut butters, and hard cheeses are measured by the size of your thumb. This is another great tip because it is so easy to over eat these foods!

Finally, cooking oils, Mayo, butter and sugars should be measured by the tip of your thumb. As you can tell, these are foods that you shouldn't consume a whole lot of!

What I love about these portion control tips is that they are all portable! You have your hands with you always, so you have to excuse not to use them to portion your food correctly!

Making a Balanced Plate
Balancing out your plate is just as important as portion control. Having the right balance of carbs, proteins, sugars and so on will help you stay healthy and achieve your goals!

Let's start with the biggest portion of the plate. 1/2 of your plate should be filled with leafy greens and a variety of veggies and/or fruit. Try and chose something new or different every meal to keep your body and mind guessing! Here are a few quick suggestions!
Swiss Chard, Bok Choy, Sugar Snap Peas, Broccoli, Kale, Spinach, Lettuce, Squash, Radishes, or a blend of several veggies!  They can be eaten raw, steamed, sautéed, or grilled! I like to eat these first, so I fill up on veggies and fruit so I am less likely to over eat!

Next comes the grains! You should fill no more than 1/4 of your plate with grains or legumes.  They should be rich in fiber to help you feel full longer. Here are a few suggestions!
Brown Rice, Quinoa, Kidney Beans, Whole Wheat Bread, Black or Navy Beans, or Lentils!

Protein time! Like the grains, only 1/4 of your plate should be filled with your protein. Use your portion control skills to chose a palm sized piece of meat, fish or poultry!
Fish, Lean,grass-fed meat, and eggs are good choices and for the vegetarians out there, Beans and Rice, Edamame or Tempeh are good choices as well!

As well as having your plate 1/2 fruit or veg, 1/4 whole grains and 1/4 protein, you should also include a portion controlled amount of healthy fats like oils, nuts, or avocados. You can sauté your veggies with an oil like Olive Oil or Coconut Oil, add nuts to your salad or rice, and avocados are, in my opinion, good on everything!
 Have fun with it, and mix it up! Don't just have the same thing every day, because you'll get bored and you will be less likely to stick with it! Another great tip is to try something new every week! Go to the grocery store or Farmer's Market and pick out something you've never tried before! This will help you expand your palate!

I Moved!

My life has changed quite a bit these past few weeks! Some of the changes are exciting, some bittersweet and others are going to take some getting used to!
 
A few weeks ago we got a contract to sell our 30 acres+ house. We had been trying to sell for about a year and a half, so to finally have a serious offer was exciting! After we accepted the offer, we starting packing. It wasn't until we starting packing that we realized how much stuff we had! We took countless loads to Goodwill and a local thrift shop!
 
As we got closer to the moving date, I realized more and more how much I was going to miss our home and land.
 
Our blueberry bushes were loaded this year, and we would miss picking them!
Our fruit tress promised to have a great yield this year!
 
I was going to miss having the garden to pick fresh veggies from!
 
 
Even though I was sad to leave our old home, I was excited for the changes ahead! On moving week, we rent a U-Haul truck and, with help from some friends and family, we loaded it full with things to take to our new house!
 
My little brother was quite impressed with the dinosaur on the side of the truck!
I'm not sure we could fit one more thing on that truck! After we had loaded the truck, we spent a few nights in our empty house to do some last minute cleaning.
I was kind of fun, camping out in my room, but I missed my bed!
 
Finally, on Moving Day, we loaded up in our vehicles( A U-Haul and a suburban pulling my Dad's FJ Cruiser) and left our old house! It was sad to know that we were leaving that house for the last time, but exciting to know what was ahead!
When we got to our new house, it was raining! Thankfully we had some great help and we got the truck unloaded in under two hours!
 
Our new dining room was full of boxes!
I was glad to sleep in my bed again! So much better than the floor!
 
One of the first things I unpacked were the coffee and tea pots! Gotta have my coffee in the mornings!
 
Mom even took some plants from the garden with us! We now have tomato plants, raspberry bush and some basil in pots!
 
My view went from a pond, some trees and space to houses, neighbors, and empty lots!
 
We bought a house outside Nashville, TN in a nice neighborhood. I haven't lived in a neighborhood for a while, so it will take some getting used to!
 
Now that we have moved, we are closer to a lot of things like shopping, groceries, and so on. Before we lived 45 mins to anything and now we can be to a Lowe's in under 10 mins! Its crazy :)
Also, we will get to spend more time together as a family since my Dad has to be in Nashville for work quite a bit and before he was travelling back and forth and now he can come home at night!
 
We still have a few boxes to unpack, beds to put together and organizing to do, but we have officially  moved in and are adjusting to suburban life! Hopefully now that we are more or less settled, I can get back to regular healthy lifestyle posts!
