Vegan Oatmeal "Pantry" Cookies



     Oatmeal cookies aren't usually everyone's favorite cookies.....that is, until now! These are not your basic, run of the mill oatmeal cookies! They are packed full of flavor, bursting with deliciousness....oh and their vegan, dairy and egg free! How cool is that!?


     As a kid, I can remember making "pantry" cookies quite often. What are pantry cookies? Well, you start with a basic cookie recipe, mostly choc. chip cookies, and add just about everything you can find in the pantry.  Anything from oats, cranberries and raisins to cinnamon, espresso powder and Oreos. Anything you can find, it goes in and the out come is always delicious!


     Not only are pantry cookies delicious cookies, but they are also a great way to use up ingredients that are just sitting in your pantry. Almost out of raisins, dump them in. Leftover Halloween candy? They go in to......If you like it, add it in! There are not rules!



Ingredients:

1 cup Vegan Butter or Margarine

3/4 cup Brown Sugar

1/2 cup White Sugar

1/3 cup Coconut Milk

1/4 cup Oil

2 tsp Vanilla

2 cups Flour

1 tsp Baking Soda

1/4 tsp Salt

*( Add Ins)*

1/3 cup Oats

2 tsp Cinnamon

2/3 cup Cocoa Powder ( May need more milk if you use this)

1/2 cup Cranberries

1/2 cup Raisins


Step 1: Blend vegan butter, both sugars, vanilla, coconut milk and salt together until smooth.
Step 2: Add in the Oil and Cocoa Powder and cinnamon( if using) Mix to combine.
Step 3: Add in the flour, oats( if using) and baking soda. Mix until partially combined.
Step 4: Add in your add-ins ( Raisins and Cranberries) and mix until combined.


     The dough should be soft, but not sticky and be able to hold together. At this point, you can refrigerate for a week or freeze for several months as long as the dough is well sealed. 

Step 5: Preheat Oven to 350F
Step 6: Grease a baking sheet
Step 7: Use a spoon, or your hands, to roll the dough into 1 inch balls and flatten them slightly


Step 8: Baking for 15-20 minutes, or until the edges of the cookies start to go firm and they fill the house with a wonderful smell.


Step 9: Allow cookies to cool for 5 minutes on the baking sheet before removing them and placing them on a wire rack to fully cool.


Step 10: Grab a cold class of coconut milk or a hot cup of coffee and enjoy your cookies!

 
     I made these cookies with my 4 yr old little brother and he was so proud of himself! These are great cookies to make with kids because its a dump-mix-baking recipe, which means its not complicated or hard at all!
