When I think summer, one of the first things that comes to find are citrus fruits! For some reason, the sourness and sweetness of lemons, limes and oranges just goes with Summer so well! These Lemon Bars are the perfect citrusy, summer time dessert!
I love citrus flavored foods, especially in the summer! Adding the tangy citrus flavored to foods seems to just elevate them so much...its amazing!
I thought that I would never be able to have a normal tasty lemon meringue, key lime pie or lemon bar after I went vegan because they all contain a lot of eggs and dairy.....but I was wrong! And I am so happy that I was!
This recipe for Lemon Bars is vegan, dairy free, egg free and super delicious! Its the perfect summer time dessert!
Ingredients:
Crust:
3/4 cup Coconut Oil
3 tbs Sugar
3 tbs Powdered Sugar
1 tsp Vanilla Extract
1 2/3 cup All Purpose Flour
3 tbs Cold Water
1/4 tsp Salt
Filling:
1 1/2 cup Coconut Milk ( or nondairy milk of choice)
2/3 cup Lemon Juice
5 tbs Maple Syrup
4 1/3 tbs Corn Starch
1 tsp Turmeric ( for color)
1 tsp Salt
3-5 tbs Powdered Sugar
2 tbs Coconut Oil
Step 1:
Add all crust ingredients to a stand or hand held mixer. Mix well until you have a moist and crumbly mixture. Its helps if the coconut oil is slightly soft.
Step 2:
Grease or line a baking dish and press the crust mixture evenly on the bottom and side of the pan. Bake for 30-40 minutes at 335F.
Step 3:
Set crust aside and allow to cool. In a large pot on the stove, add the coconut milk, lemon juice, maple syrup, corn starch, turmeric, and salt. Whisk to combine and then bring to a gentle heat and cook until the mixture thickens. Around 6-7 minutes.
Step 4:
Remove pot from stove and stir in the powdered sugar and coconut oil until it is as sweet as you like. Then, remove lemon mix from the hot pot into a bowl and allow to come down to room temp.
Step 5:
Once both crust and lemon filling is cool, pour the filling to the crust and let chill for 2 hours in the fridge.
Step 6:
If serving it right away, sprinkle powdered sugar over the top and cut and serve. If you aren't serving it right away, or you won't serve the whole pan at once, sprinkle on the powdered sugar as you go.
This recipe turned out so well! I loved how easy it was to make and how delicious it tasted in the end! It is such a great dessert or snack for a warm summer day!
