Refined Sugar Free Berry Cobbler


     Summertime always reminds me of fresh berries, picnics and berry cobblers. I love having warm berry cobbler with a scoop of ice cream melting on top. But, like most desserts, that is usually full of processed and refined sugars. Thankfully, I've created a recipe free from refined sugars, but still full of flavor and sweetness!


    With summer fast approaching, I thought it was time for a summer time dessert recipe post! Berry cobblers are favorite in our family, especially around this time of year! This Refined Sugar Free Berry Cobbler is the perfect thing to take to a summer picnic or party!


     Refined and processed sugars might make our food taste good, but they are pretty harmful to our bodies. We want to avoid them as much as possible, but that doesn't mean giving up desserts or sweets. It means we have to learn how to make our favorite sweet treats with healthier forms of sugar! This recipe replaces the usual white or brown sugar with maple syrup ( or you could use honey) which is generally less processed.


Ingredients:

(Filling)

1 1/2 cup Frozen Peaches

4 cups Frozen Berries

1/2 tbs Lemon Juice

1 tsp Vanilla

1/2 cup Maple Syrup

1/2 cup Whole Wheat Flour

1 tsp Cinnamon

Pinch of Salt

( Topping)

1/3 cup Soft Coconut Oil

1/3 cup Maple Syrup

1 tsp Vanilla

1 tsp Cinnamon

1/2 cup Whole Wheat Flour

1 1/2 cup Rolled Oats

Pinch of Salt


     Start by mixing together the frozen fruit, lemon juice, maple syrup and vanilla. Let this sit for 5 minutes to allow the juices to start coming out of the fruit . Then, add in the flour , cinnamon and salt.  Mix well together and then pour into your baking dish.


      Next, mix together the coconut oil, maple syrup, vanilla and salt before adding in the flour, oats and cinnamon for the topping. It will be stiff, but keep mixing until it comes together. Use your fingers to crumble the topping over the fruit mixture.

 

     Preheat the oven to 425 F and bake your cobbler for 35-40 minutes, or until the fruit is bubbling and the topping begins to brown.


Allow to cool for 10 minutes or so before serving. I like to have my cobbler with dairy free vanilla ice cream or dairy free whipped cream!


     I love how well the peaches and berries work together! It really makes for a summery dessert! I also love the crumble on top, it adds great texture! And, its made with whole wheat flour, so there are added nutrients!


     I can't wait to make this dessert for summer evening desserts, parties and picnics! I can see it at a Memorial Day, July 4th or any summertime celebration!
