Blueberry muffins are one of the best things for breakfast, snacks and every thing in between! A balance of sweetness, tartness and the deliciousness of baked goodies! This vegan recipe is sure to win you over, whether you're vegan or not!
I love blueberries! I am always so excited when they come in season! I love to eat them by themselves, but I also love to bake with them! Putting them in muffins just seems like a no-brainer to me!
When I first went vegan, baking was a struggle for me. I loved to bake so much, and learning to make delicious baked goodies, vegan, took some time, but I like to think I'm pretty good at it now! I always makes me so happy when I take a non-vegan recipe ( like these muffins original recipe) and turn it into a vegan recipe, without loosing flavor or texture!
Ingredients:
1 cup Almond Milk
2 tsp Apple Cider Vinegar
1 tsp Vanilla
2 tsp Lemon Zest
1/3 cup melted Coconut Oil
2 cups All Purpose Flour
2 1/2 tsp Baking Powder
1/2 tsp Baking Soda
2/3 cup Sugar
Pinch of Salt
(Optional) 2 tsp Cinnamon
2 cups Frozen or Fresh Blueberries
1. Heat oven to 350F
2. Mix together the wet ingredients, all but the vinegar.
3. Wisk together the dry ingredients
4. Pour wet ingredients into the dry and mix to combine.
5. Fold in the blueberries and apple cider vinegar
6. Pour batter into greased muffin tins, about 3/4 full
7. Bake for 20-22 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
8. Allow to cool in pan for 10 minutes before removing to a wire rack.
I made these while we had company in town and they were a huge hit! I don't think they lasted more than 24 hours! I always feel so glad and happy when I make something that others enjoy!
Next time I make these muffins, I am think about making a double batch and freezing half of them for when we are in a pinch and need a quick breakfast! I think they will freeze and thaw well and it will make for easy breakfasts!
