On chilly fall and winter nights, the best thing for dinner is a piping hot bowl of soup. This Green Chile and Potato soup is the perfect balance of flavors and is sure to warm you up, no matter how cold it is outside!
A few nights ago, my family was having Green Chile ( a nonvegan version) and so I decided to make a vegan version to enjoy with them. I love how well this recipe turned out, and how simple it was to make. Not only is it bursting in flavor, but super healthy and nutritious as well!
If you like spicy food, this is a recipe for you! And if not, then it is just as easy to tone down the spice to your level. I added fresh avocado to the top and it was just perfect!
Potatoes are a great vegetable to add to any soup. They thicken the soup, add bulk, and are simply delicious! I added white potatoes in this case, but red, yellow or even sweet potatoes would be delicious!
Recipe
Ingredients:
3 medium potatoes of choice ( I used white russets)
1 4 oz can Green Chiles ( more or less depending on level of spice you prefer)
1 medium White or Yellow Onion, diced
4-5 cups Vegetable Broth
1 cup Water
2 TBS Olive Oil
Salt and Pepper
2 tsp Cumin
1 tsp Coriander
2 TBS Sugar ( as needed to help with the spiciness)
Cilantro
Directions:
1. Sauté onions and green chilies in the oil until the onions have softened.
2. Add in spices and seasonings and cook for 1 minute.
3. Chop potatoes ( you can leave the skin on or peel them) and add to pot. Cook for 1 minute.
4. Add vegetable broth and sugar to the pot, bring to a boil and then reduce to a simmer.
5. Simmer for 30 minutes, or until potatoes have become soft. If soup is desired thickness, more to next step. If not, add water as needed.
6. Chop cilantro and add to the soup.
7. Remove from heat and serve with more cilantro and diced avocado.
Adding the cilantro to the soup causes a burst of aroma into the kitchen and a burst of flavor to the soup! This step cannot be left out!
Some crushed tortilla chips or some crumbled vegan cornbread would also be a delicious addition to this soup! Its so versatile! Anything would be amazing added to it! Black beans, carrots, bell peppers, quinoa, rice....let your mind and taste buds go wild!
