Sugar and Spice Roasted Pumpkin Seeds



Halloween was this week and that means lots of leftover pumpkin 'guts', leftover from jack o'lantern carving. Instead of throwing away those seeds, turn them into a delicious and healthy snack for everyone to enjoy?




     We carved our pumpkin this week, a few days before Halloween, and it was so much fun! My little brother ( 4.5 yrs) is in love with the holiday and everything related to it, so he had a blast. As we carved the pumpkin, I pulled out the seeds because I wanted to try and roast them and turn them into something delicious!

 
 

 
This recipe is super easy and perfect for getting little ones involved. We used a large carving pumpkin, but I am sure any type of pumpkin will work! You might just need to adjust the recipe to fit the amount of seeds you get from your pumpkin.
 
 
Ingredients:
 
Seeds from 1 Pumpkin ( we had about 1.5 cups of seeds)
 
1 tbs melted Coconut Oil
 
1 tsp Salt
 
2 tbs Brown Sugar
 
1 tbs Pumpkin Pie Spice ( or just cinnamon will work too)
 
 
 
Start by cleaning the pumpkin and pulling the seeds out of the insides. Then. wash then and lay them out on a paper towel to dry.
 
 
 
 
Once they are fairly dry, add the seeds to a bowl along with the coconut oil, salt, sugar and spices. Stir well to combine and evenly coat the seeds.
 
 
 
Line a baking sheet with parchment paper and spread the coated seeds out evenly. Try to make sure not too many seeds are stuck together.
 
 
 
Heat the oven to 325 and roast the seeds for 30-45 minutes, or until golden brown and crunchy. You will want to stir the seeds every 10 minutes to roast them evenly. Allow them to cool before enjoying!
 



 
 
These seeds are delicious eaten by themselves as a quick snack, or as a topping for salads, smoothie bowls, oatmeal, yogurt bowls, or even ice cream. They could also be added to trail mix to spice things up a bit!
 
 
 
 
My little brother was quite pleased with the resulting jack o'lantern that he designed himself and assisted in creating. He gets a scary pumpkin and an afternoon of fun and I got some delicious seeds to roast! Its a win/win situation!
