Vegan Green Chile and Potato Soup


On chilly fall and winter nights, the best thing for dinner is a piping hot bowl of soup. This Green Chile and Potato soup is the perfect balance of flavors and is sure to warm you up, no matter how cold it is outside!

Oil Free Fries

     Who doesn't love French fries? They're crispy, crunchy, salty, and (usually) fairy oily. How do we turn fatty, oily and unhealthy French fried into delicious, healthy homemade fries? It actually super simple and before you know it, you'll have some guilt-free French fries and you didn't even have to leave the house!

 
     I love just about anything made out of potatoes! Mashed, stewed, fried, baked, roasted..... the list goes on and on! I love turning these usually unhealthy dishes into healthier versions! These homemade fries are just as delicious and crispy as the ones in restaurants, but they are oil-free, vegan, and full of flavor!

Ingredients:
Potatoes ( Usually around 1 potato per person)
Salt and Pepper
Garlic Powder
Paprika
* Use what ever seasonings you like to customize your meal!

Start by washing and drying your potatoes. I only used one large one this time!



Cut them into sticks. The thickness depends on you. The thinner the sticks are, the faster they will cook and the crunchier they will be!



Add them to a bowl and sprinkle in your seasonings. I used around a tsp of each seasonings for my one large potato. Then, line a pan with parchment paper and lay out your potato sticks. Make sure they aren't touching.



Then, bake at 450 F for around 30-40 minutes, depending on the size of your sticks. Half way through, flip your potatoes over to get them crispy on all sides.


And now you have delicious, healthy French fries!


I love to eat these with ketchup, BBQ sauce, guacamole, or just on their own! They also pair well with veggie burgers, grilled veggies, and even inside tacos for a crunchy texture! However you eat these fries, I am sure you will agree with me, that these are some super yummy, oil free fries!

Scary Pumpkin Potaotes!

Happy Halloween! 
     These is nothing scary about these adorable pumpkin sweet potatoes expect that they are Scary Delicious! They are a great way to get in the mood of the upcoming holiday, and still have something healthy!

 
   I love these pumpkin sweet potatoes because they are so easy to make, customizable to whatever flavors you want, and so healthy too! Who says Halloween 'treats' all have to be unhealthy? At first I wanted to do something sweet and healthy to celebrate Halloween, but then I got to thinking....Halloween doesn't have to be all about the sweet stuff! Lets do something savory to celebrate the holiday!
Another great thing about these sweet potatoes is that they can be made vegan, oil-free, and sodium free if you wish!

Scary Sweet Potatoes! (Yes, sweet potatoes are sweet, but more to the savory side of things!)

1 Sweet Potato
Olive Oil (Optional)
Salt and Pepper (Optional)
Seasonings of Choice( I used a Jerk Seasoning, Pumpkin Pie Spice, and a Curry Powder- separate on different slices of potato)


You can go sweet, spicy, savory, or salty with the seasonings!

Start by preheating your oven to 350 F. Then wash and pat dry a sweet potato. You can always do more than one, I was just making 1 portion at the time! :) Then, use a sharp knife and cut slices out of the potato. BE CAREFUL!

 
Then, use a smaller knife to make the pumpkin faces. You can cut all the way through the potato, or you can just cut part of the way through. Its up to you really! :) Then toss them in the oil( if using) and place them on a foil-lined sheet.


I'm sure with practice, my pumpkin faces will improve! These are so tasty, I am sure I will be making them time and time again!

Sprinkle the seasonings on the slices. If you are using a powder, rub the powder in a bit. Then sprinkle on salt and pepper as desired.


Super cute! Now they are ready to bake! Place them in the oven for around 35-45 minutes. The time depends on how thin or thick you cut your slices. To check if they are done, just poke them with a fork. If they are soft, then they're done!



Of my goodness! How adorable are these? No, not a scary way to celebrate Halloween but defiantly fun and festive! And, if you don't celebrate Halloween, they still are fun and easy to use for a number of different occasions!

Fire Cracker Roasted Potatoes

Happy Fourth of July! Last 4th were in New York City( The picture above is The Empire State Building at night on the 4th) and we celebrated with a baseball game,  fireworks, a great dinner out and a late night walk to the top of the Empire State Building!

This 4th, we will be road tripping through Canada! But, just because we'll be in a different country, that doesn't mean we won't still  celebrate our country's special holiday!
 

BBQ, burgers, grilled food and sides are one of America's favorite ways to celebrate any holiday, especially the 4th. My Fire Cracker Roasted Potatoes make a great side dish for BBQ, burgers, grilled meats and veggies!

Ingredients:
17 Small Red Potatoes (Or enough to feed you crowd!)
2-3 TBS Olive Oil
Salt and Pepper
2 TSP Paprika
1/2 TSP Chili Powder

Wash and dice up the potatoes into cubes. The smaller they are, the faster they will cook, but don't make them too small!


Place them in a 9x13 baking dish and shake the pan to make an even layer.
 
 
Drizzle with the oil and sprinkle with the seasonings.
 
Stir to coat all the potato cubes and place in an oven PREHEATED TO 350 DEGREES.
Cook for 45-50 minutes, stirring every 20 minutes or so. To check readiness, poke with a fork. If the fork goes in easily, then they're ready!
 
Yummy! They smell so good and taste even better!
 
Serve these with your favorite dipping sauce or plain with your BBQs, Burgers, Grilled meats and more! A fun, Patriotic twist would be to use a few purple potatoes in the mix as well. Then you get the full, red-white-and-blue effect!
