Vegan Apple Crumble Muffins - Recipe


Muffins are the perfect breakfast, snack or even dessert for just about anytime of the year! These muffins are full of fruity flavor, cinnamon-y spice, perfect sweetness and topped with a delicious crumble!



A few weeks ago we ordered a box of apples and they were delicious! We couldn't eat them fast enough, so we made some pies, froze some apple slices and made Apple Crumble Muffins!


     These muffins are so moist, sweet and the perfect balance of cinnamon and apple! I was so pleased at how they turned out! They didn't last long in our house and I can't wait to make another batch! They can be eaten for breakfast, lunch or dinner....or whenever you feel like a sweet little muffin full of apples, cinnamon and deliciousness!



     Each one of these muffins are egg-free, dairy-free( VEGAN!) and most of the sweetness comes from fruit, which is awesome! I think some raisins, nuts even some cranberries would be amazing in these muffins, but they are delicious just as is too!

Lets get into the recipe!



For Muffins:
1 large Apple, diced into small pieces
1 Banana
1 c All Purpose Flour
1/2 c Whole Wheat Flour
1/2 c Rolled Oats
2 TBS Flax Meal
1 1/2 tsp Baking Powder
2 TBS Baking Soda
Pinch of Salt
1/2 c Sugar
1/4 c Brown Sugar
2 tsp Cinnamon
1 tsp Nutmeg
1 c Almond Milk
2 tsp Apple Cider Vinegar

For Crumble:
2 TBS Coconut Oil
4-5 TBS Brown Sugar
3-4 TBS Flour


Start by getting your apple ready and mashing the banana.

 
Next, add in the dry ingredients to the banana.

 
Start mixing and then add in the almond milk slowly. Mix until there are no flour lumps, but don't over mix. Then, mix in the apple cubes.


In a separate bowl, mix together the crumble ingredients. You might need to warm up the coconut oil up a bit to make it easier!


Line or grease a cupcake/muffin pan. Then, stir in the apple cider vinegar into the muffin batter. It should fizz a little bit! Fill the muffin cups about 3/4 of the way up and then sprinkle a bit of the crumble on top!

 
Bake at 350 F for 20-25 minutes, or until a toothpick comes out clean if stuck in the center of a muffin! Allow to cool before removing from the pan.


These make the house smell so good while baking! I can hardly wait for them to cool to eat them, but I don't want to burn my mouth so........

 
     The Apples add a burst of flavor and sweetness when you bite into these muffins! I love the addition of the crumble on top, but if you wanted to keep this recipe completely oil-free, you could leave it off and they still would be amazing!
