Chocolate Lover's Granola - Small Batch Granola


Valentine's Day is just a few days away, which means chocolate is everywhere! It seems that chocolate is a popular way of saying 'I love you!' ! This Chocolate Lover's Granola is the perfect way to say I love you to a friend, special someone or even yourself!




     Last year around this time I made Valentine's Day Granola   , which is a basic, oil-free granola recipe! Its delicious and I do recommend you make it, but for this Valentine's Day, I wanted chocolate!

 
 This recipe is small-batch style, but you can easily scale it up and a make a bigger batch! And while this recipe does have oil in it, it still is vegan, sugar free and delicious! Perfect for a Valentine's Day gift, breakfast, snack or even dessert for you and your special someone!


Ingredients:

1/3 cup Melted Coconut Oil

3-4 TBS Cocoa Powder

4-5 TBS Maple Syrup

Pinch of Salt

1 cup Rolled Oats

1/2 cup Shredded Coconut

Start by mixing the coconut oil with the maple syrup, cocoa powder and salt. Make sure to work out any cocoa-powder lumps before moving on. P.S this also makes a delicious chocolate sauce for ice cream, over bananas or stirred into milkshakes or hot cocoas!



Once the mixture is smooth, set that bowl aside and add your oats and shredded coconut to a bowl. Give them a quick mix before adding in the chocolate mixture. Stir well until everything is evenly coated!


Then, pour your granola mix on a baking sheet and flatten it out to an even layer. Since this was a small batch, I actually used my toaster over and a pan that fit into it. It worked great and was much easier on the clean up!


Heat your oven to 375 F and bake for 25-30 minutes, stirring every 10 minutes, until the oats are dry and starting to go crispy! Make sure to flatten the granola out after every stir!


Once the granola is done baking, allow it to cool before enjoying or storing in an air-tight container! Place it in cute packaging and give it as a gift, or eat it yourself over yogurt, smoothie bowls, ice cream, bananas, or just by itself!
