Soft Vegan Sugar Cookies



Everyone loves a good, soft, gooey sugar cookie, complete with all the sprinkles! This recipe is a delicious, vegan version of the treat we all love! Easy to make and super yummy to eat!




Sugar cookies are a staple in most people's houses, especially around this time of year. Whether you're making cookies for Santa, or just some delicious holiday treats, this is a great recipe to have!


The cookie dough alone was delicious and beautiful. I couldn't stop myself from eating it.....I almost had no dough for actually cookies! But, the good thing is, this dough is VEGAN, so if you wanted to eat the whole batch, you could. No raw eggs here!


Recipe

2 cups All Purpose Flour

1 tsp Baking Powder

1 tsp Baking Soda

1/2 tsp Salt

5 tbs Vegan Sprinkles ( optional )

1 cup Sugar

1/2 cup Vegetable Oil ( melted coconut oil would do well here also )

1/4 cup Nondairy Milk ( I went for coconut, but almond or cashew would be fine too)

1 tsp Apple Cider Vinegar

1 tsp Vanilla Extract

Directions:

1. Preheat oven to 375F. Line or grease a baking sheet.
2. Mix together flour, baking powder, baking soda, salt, and sprinkles.
3. Add in the sugar, oil, milk, vinegar and vanilla and fold to combine.
4. Use a spoon or your hands to form 1-2 inch dough balls. Do not press the balls down too much as they will spread during baking.
5. Give plenty of space between the cookies.
6. Bake for 10-12 minutes, or until the edges are firm and there is a hint of brownness.
7. Remove cookies from baking pan on to a wire rack to cool.
8. Enjoy some delicious sugar cookies!



I was so excited to eat these cookies! I hadn't had good, gooey sugar cookies in a while, and these did not disappoint! I probably could have eaten the whole batch before they cooled off! My 4, almond 5 yr old brother also was a big fan!


These are perfect cookies to make during the holidays! You can customize them by adding in whatever you'd like. I think chocolate chips, candy cane pieces, crushed Oreos, or cranberries would be excellent in these cookies! They are also the perfect cookie to make with kids to leave out for Santa, or to eat with some hot cocoa!
